Borda Berri has no pintxos on the bar, they prepare everything à la minute and everything is dreamy. The chefs here cook the way your grandmother would have if she had been Basque.

One of our favourite pintxos is The Ear. This ear ain’t for the faint hearted but it is for everyone who enjoys bold flavours and contrasts in textures. It is crisp, salty, lashed with a garlic and parsley sauce, and placed on some creamy romescu sauce (made with roasted red peppers, garlic and almonds.) The pig’s ear at Borda Berri will change your mind about offal and all the odd bits of animals.
